Give a variant a Minimum price on Price and inventory, and customers choose what they pay: the product page asks for Your price, filled in with the variant's price as the suggested amount. An amount below the minimum is refused, and checkout checks it again against the current minimum. Discounts do not lower an amount a customer chose.
